I love a recipe that takes 5 minutes to prepare, doesn’t involve any cooking and always receives compliments.

This fig, blue cheese & prosciutto salad is one of them.

It’s about pairing quality ingredients together with complimentary flavours.

Figs are in season at the moment and are the star of this salad.

Teamed with your deli favourites of prosciutto and blue cheese, this salad makes for the perfect side dish for two or a decadent main for one.

Fig, blue cheese & prosciutto salad

Serves one as a main or two as a side dish.
  • 2-3 cups of rocket leaves
  • 2 rashes of
  • 3 figs quartered
  • 20 grams of blue cheese crumbled
  • 20 grams walnuts chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon of olive oil

On a serving platter of your choice place the rocket. Top with the prosciutto then the figs, blue cheese and walnuts. Just before serving, dress the salad. Enjoy.
