What has been getting me through the last few days on my detox? This amazing slice. Oh my goji. Everyone that has tried it loves it! From the freezer it tastes like chocolate and from the fridge it has a fudgy consistency. We even gave some to the guy doing a pest inspection at our house today who began rattling on about the plethora of benefits that the little chia seed has after noting them in the bars. Mum and I were in hysterics. How random and unexpected is that?
These bars are super versatile which I love. You can put your own flavour on them by adding things like ginger, goji’s, raisins or anything else you like. That’s the beauty of raw food, it’s almost impossible to stuff up. I rolled these into balls but I much prefer slicing it. That way I can easily reach for a nice thick piece if my energy slumps low and I am needing some pep in my step!
Vegan Protein Slice
Makes 1 standard loaf and around 8 extra balls for ‘chef snacks.’ Recipe is adapted from Model Chocolate
Vegan, Raw, Organic, Gluten-free, Refined sugar-free, Dairy-free
1 cup of pitted medjool dates packed tightly into the cup
3/4 cup brazil nuts
3/4 cup pecan nuts
1/2 cup raw cacao powder
1/2 cup rice protein powder (I use a Vegan, organic, raw sprouted brand!)
1/2 cup coconut oil
1/3 desiccated coconut
1/3 cup cacao nibs
1/3 cup chia seeds
2 tablespoons of nut butter such as almond, brazil, cashew or even tahini
1 teaspoon vanilla powder
Pinch Himalayan salt
Optional: sweetener – coconut syrup, agave, honey or stevia if not sweet enough
– Process all ingredients in a Vitamix or food processor until they start to bind together. The mixture will start to resemble a fudge like consistency. If the mixture has trouble binding, simply add some water or more coconut oil until it binds together nicely.
– Press into loaf tin or roll into balls and store in the fridge or freezer
