Pear and ricotta pancakes

Buckwheat flour, ricotta cheese and pears make for a delicious change on the usual sweet breakfast treat.

I released my first DVD this weekend. It still feels a little odd saying that. What did I do to celebrate you ask? Well, I bought a Megan Gale bikini and made pancakes. Seems a little odd.

I looked at a few recipes and found one that looked pretty good. Of course though, I had to tweak. I love food. I love savouring the taste which is why I believe I am so picky, I really want to enjoy the experience. Which is why I spent about 2 hours last night researching pancakes… anyway here we go…

Ricotta Buckwheat Pancakes with Cinnamon Maple Ricotta and Sautéed Pears

Serves two hungry ladies. I loosely followed this recipe

Ricotta:

1/2 cup fresh deli style ricotta
1 teaspoon of organic real maple syrup
1/2 vanilla pod scraped
1/2 teaspoon of cinnamon

1. Mix the above and adjust the flavourings to suit your tastes
2. Place in the fridge while preparing rest of ingredients

Pears:

2 Beurre Bosc Pears, sliced and then halved. Approximately 0.5cm thick
1 tablespoon organic real maple syrup (no fake shit!)
1/2 teaspoon of cinnamon
1/2 vanilla pod scraped
2 tablespoons macadamia oil

1. Add oil into large skillet, heat, add pears
2. Saute until pears are tender
3. Add maple syrup, cinnamon and vanilla with a little water, about 1/4 cup and continue to cook on low heat until pears are soft and sexy
4. Keep warm and prepare pancakes

Pancakes:

4 organic eggs separated
1 cup of fresh deli style ricotta
2 sachets of natvia
1/2 cup of Buckwheat pancake mix
Pinch of salt

1. In your mixer, whisk whites and pinch of salt until still peaks form
2. Whisk egg yolks with natvia and ricotta until smooth
3. Add flour to egg yolk mixture and fold through
4. Add 1/4 of egg whites to egg yolk mixture to lighten
5. Fold through rest of egg whites being gentle!
6. Heat skillet with a bit of butter, cook pancakes and then place in an oven to keep warm if you need to while you cook the rest

Plate up and present to your liking, topping with a little extra maple. Don’t go too heavy-handed with the sauce, the pears are deliciously sweet enough! I could give you a calorie breakdown but calorie counting kind of sucks. Eat until your just full and don’t have a shit lunch – guilt free dining right there!
